Inspired by Japonica

An internet friend of mine has used the raspberries in jelly idea on here and loved it. So much so that the conversation turned into plans to elaborate the dish. The end result is this trifle that went down a storm when my Mother-in-law came for lunch. Low fat, low point and really indulgent. Thanks for the inspiration Japonica x!

Trifle
Serves 6 - 2 points each

1 sachet sugar free jelly
1 punnet raspberries
1 punnet blueberries
4 trifle sponges
1 carton reduced fat custard
4 tbsp half fat spray cream
1/2 pt diet lemonade

Make the jelly according to the instructions on the packet but substitute the lemonade for part of the water. Add the fruit and sponges and chill until set. Once set add the custard and refrigerate again. Just before serving add the spray cream and decorate with extra fruit.

Rasberry Jelly

This is a low point treat that always goes down well in my house. Everyone enjoys it including the boys.

Raspberry Jelly
1 pt for the lot

1 pack sugar free raspberry jelly (Jell-o)
1 punnet of fresh raspberries

Make up the jelly following the instructions and allow to cool so that it is still liquid but not hot. Add the raspberries and chill. Simple but really filling and delicious as a pudding. You could add low fat icecream to serve as a treat.

This works with most soft fruits except kiwi fruit and pineapple as they have an enzyme in them that stops the jelly from setting.

Pancakes

Pancake Day brings back memories of huge pancakes smothered in good things, when I was young golden syrup was always a favourite in our house as well as the traditional lemon and sugar. Having young children means that there is no way I can get away with avoiding making pancakes, but fortunately with WW Full choice as long as you have the points you can indulge. There are many recipes for pancakes but here is my low fat version

Pancakes
Makes 6 – 1 Pt each

60 g plain flour
1 medium egg
¼ pint skimmed milk
Pinch of salt
Water

Put all the ingredients in a bowl and whisk into a smooth batter, it should be the same consistency as cream. Do not worry too much about any lumps.

Heat a small non-stick frying pan and spray with oil from a mister. Add a ladle of batter and swirl around so that the bottom of the pan is covered. When the batter is set and bubbles appear on the surface flip or turn the pancake and cook until the other side is golden brown.

I served mine with lemon juice and a little sugar free vanilla syrup - delicious. I also love savoury versions such as turkey rashers and tomatoes or ham and cheese.

Strawberries

For some reason strawberries are everywhere and it's February! Our local market had a special offer on strawberries - 2 punnets for £1.00 and I could not resist. They were a little sour so I drizzled them with a little sugar free vanilla syrup and that really lifted them. It's cold dark and rainy but I have the taste of strawberries and icecream in my mouth and a big smile on my face.

Out of season indulgence

I could not resist buying some fresh rasperries as they are my favourite fruit and so low in points. I eat them just as they are and although they are not cheap especially at this time of year I felt they were worth it. The punnet was 250g and my husband and I shared them for only 0.5 pts each!

Sweet Treats

Sometime only cake will do. I love to save my points in order to satisfy my sweet tooth with a late evening treat. I buy the WW's cookies at 1.5 points for two and also the little cake bars at a point each. You can buy these from WW and most supermarkets.

Lemon Sorbet

Finding a suitable dessert when you are entertaining is very difficult. You don't want to give your guests a pre-bought Weightwatchers dessert but you don't want to make a hugely indulgent pudding that will tempt you too much. I find that a tangy lemon sorbet fulfills both roles. I serve mine in the lemon shell which adds a little something.

Lemon Sorbet
Serves 8 -2 pts per person

Juice of 8 lemons
4 tspn of finely grated lemon peel without pith
240g castor sugar
600 ml water
4 egg whites

Mix all the ingredients except the egg white in a large bowl. Stir until the sugar has dissolved. Pour into a tin ice container and place in the freezer. Stir through several times as it starts to freeze at the edges until the whole thing becomes mushy. At this point whisk the egg white until firm but not stiff and fold it into the lemon mixture until well blended. Leave to freeze properly. When needed allow to soften slightly in the fridge before taking scoops and placing in lemon shells or pretty glass dishes with a slice of lemon on the edge to decorate.

As this contains raw egg it is not suitable for very young children or pregnant woman.

This is especially nice served with a shot of vodka or a liquer such as Cointreau poured over the top. I let my guests decide which they would prefer. Just don't forget to add the points on! You could try it made with granulated sweetner subsituted for all or part of the sugar.

Frozen Delights

I have recently discovered Skinny Cow icecream and lollies and I am so glad that I did. These finish of a meal perfectly. The trouble is the children want to get in on the act too! Another low fat food that tastes and feels like a treat.
