My name is Jo and I am a single parent. I have two young boys aged 4 and 3. I'm starting this blog in order to keep myself sane and to share my experiences as a single parent. My oldest son is called Charles but is very rarely called that, he is usually referred to as Charlie or Bobbins. He is very long sighted and needs to wear glasses all the time - when he has not broken them of course. My other son is called Leo, but is known as The Bean. He has a mild case of Spina Bifida and also has hydrocephalus, not that you would know that to look at him. My intention is to take a picture every day for a year and to write a little about it. The say that a picture is worth a thousand words and each picture will hopefully represent that day.

Motivation


A few tips to help keep you motivated - thanks to everyone who contributed, I told you I was going to pinch them for my blog

Try to remember what made you start in the first place

Try http://www.mvm.com/ to make a model of yourself at your target weight you'll be amazed how good you look

I write my blog and knowing that other people visit sort of makes me not want to let them down by gaining

Book a holiday even if it's just overnight in a cheap B&B - set yourself a target to get to before you go

Buy something one size smaller don't go mad and buy a size zero you need victories along the way.

Change your diet routine. Have a large meal at lunchtime instead of in the evening.

Don't be too hard on yourself it's not a race and it will take time it took you the whole of your life to put the weight on - it will take LESS to lose it LOL

Get rid of all your clothes the minute that they become too big for you. This gets rid of your safety net and either makes you feel good if you give them to charidee or can help you buy new ones if you sell them on ebay.

Don't think about the full amount you have to lose as that can seem quite daunting. Its easier to set smaller goals such as a stone at time or the next 10% of your body weight.

When you get to goal dont get obsessed with that magic target weight- its not possible to stay exactly at it.

Hang your target outfit on your wardrobe so it reminds you daily.

Use your friends, on weigh day send your mates loss/gain text and tell them you expect a barrage of texts if they didnt.

Put pics on your fridge, not just fat pics but ones you like as the weight moves, you'll find that seeing yourself looking and feeling great will help keep you going.

For each lb you lose link a paper clip to the next one. Keep one colour for one stone and another for the next stone and so one. Its great to see the chain grow....

Take a piece of paper and split it down the middle on one side write why you want to lose weigh for the wedding ie want to wear nice clothes, bikini on holiday, get healthier etc and on the other write the against ones ie cant be bothered, dont have time etc. When its in black and white you see theres not really anything to stop you.

But the most important thing is, don't be too hard on yourself if things go awry...that's life. The main thing is not to get so down you think, oh sod it, I'll eat the whole house then. You have to get straight back on the wagon, and I find if I do, there's no or little difference to my progress, and I feel better about myself. Don't let a slip up turn into a binge

When your 2 year old...

.. decides what the family is having for dinner this is what you end up with LOL. Still oven chips and grilled fishfingers are not too bad at all. I always buy good quality fishfingers as I like them to have white flakes of cod inside and not minced grey stuff that is unidentifyable. The cheaper ones always seem to be higher in saturated fat too.

This plateful was 4 pts for the fishfingers and 5 for the chips (plus 0.5 for ketchup)

Chicken fried rice

This is so many points when you get it from a takeaway so I thought I'd have a go at my own version and this is such a cheats version. It literally takes less than 10 minutes from start to finish and really packs a punch in the flavour department.

Chicken Fried Rice
Serves 2 - 3 pts each

1/2 pack healthy living cooked chicken breast fillets
Handful of mushrooms sliced
2 tbsp oyster sauce
Garlic and chilli from the grinder
Soy sauce to taste
Pack microwavable basmati rice

Spray a wok with oil from a mister and add the mushrooms. Chop the chicken and add that plus a couple of turns from the garlic and chilli grinder. Add a splash of soy sauce and some water to stop the whole thing sticking. Put the rice in the microwave and add the oyster sauce to the chicken and mushrooms. When the rice is warmed through add to the wok and stir well. Divide between two dishes and devour. Add more soy if required

For a main meal why not eat it all to yourself?

  1. I feel less guilty about food - nothing is forbidden if I have the points I can have it
  2. I am learning portion control - I hate throwing food away and always feel I have to eat everything on my plate
  3. I am experimenting with food more
  4. I don't feel deprived I can have a treat everyday if I want one
  5. It works - I am losing weight
  6. It means that I can eat the same food as my children
  7. It's about choices - I don't pick certain foods as they are too "expensive" in terms of points this means that empty calories are avoided and I can save myself for the good stuff
  8. I can save my points and have a bit of a blow out
  9. I have no problems eating out
  10. I can eat bread!

But most of all I feel so much more postive about myself

It's nice to be able to call for a quick bite when you are out and about. I quite like Subway and they have some really good lowfat options. Six Months On


Can you spot the difference? I can't believe how much better we look. It's taken us 6 months and I still have a long way to go, but I know that I can do it. I feel so much better and am absolutely commited to getting to target.

Stuffed Chicken Breasts


Stuffed Chicken Breast
Serves 2 - 5 pts each

2 large chicken breasts
1 pack of turkey rashers
1 clove garlic
1/2 tsp dried mixed herbs
4 low fat cheese triangles

Take a large chicken breast and split to create a butterfly effect, do not cut the whole of the way through. Mix together 4 low fat cheese triangles with a little chopped garlic and some dried mixed herbs, and stuff the breast with the cheese mixture.

Wrap turkey rashers around the chicken breasts and secure with a skewer or cocktail sticks. Heat an oven proof dish or tray on the stove and spray with oil from a mister. Brown the chicken breasts all over then place in a warm oven (180 degrees) until the juices run clear and the flesh is firm.

I served this with garlic and chilli roast potatoes and salad.

Cheating

No it’s not what you think LOL!

One of the few culinary tests that defeats me is poaching eggs. But having said that judging by the watery rubbish that was served up to my husband and I in a café the other day, I am not the only one.

We were lamenting this problem and decided it was time to buy a poaching pan. As you can see it worked wonderfully and now I can cook an egg for my three lads and myself at the same time.

Pancakes

Pancake Day brings back memories of huge pancakes smothered in good things, when I was young golden syrup was always a favourite in our house as well as the traditional lemon and sugar. Having young children means that there is no way I can get away with avoiding making pancakes, but fortunately with WW Full choice as long as you have the points you can indulge. There are many recipes for pancakes but here is my low fat version

Pancakes
Makes 6 – 1 Pt each

60 g plain flour
1 medium egg
¼ pint skimmed milk
Pinch of salt
Water

Put all the ingredients in a bowl and whisk into a smooth batter, it should be the same consistency as cream. Do not worry too much about any lumps.

Heat a small non-stick frying pan and spray with oil from a mister. Add a ladle of batter and swirl around so that the bottom of the pan is covered. When the batter is set and bubbles appear on the surface flip or turn the pancake and cook until the other side is golden brown.

I served mine with lemon juice and a little sugar free vanilla syrup - delicious. I also love savoury versions such as turkey rashers and tomatoes or ham and cheese.

Strawberries


For some reason strawberries are everywhere and it's February! Our local market had a special offer on strawberries - 2 punnets for £1.00 and I could not resist. They were a little sour so I drizzled them with a little sugar free vanilla syrup and that really lifted them. It's cold dark and rainy but I have the taste of strawberries and icecream in my mouth and a big smile on my face.

Winter Wonderland

Let it snow! I love the snow but it does not seem to last very long these days. I managed to quickly take these snaps one night last week. I was really excited about the prospect of playing in the snow with my two sons. Unfortunately the next morning it had all but gone. Ah well there is always next year ...

Tasty Tatties

Sometimes with the best will in the world any diet will become boring, the problem is that you get stuck in a rut eating the same things every week and you long for something a bit different.

I am always trying to find new low fat ways to spice up everyday ingredients. Who hasn’t got sick of jacket potatoes when dieting? They are so convenient and quick plus they are available in every restaurant or café so are a great option when eating out. As a result of this I don’t like to have them too often at home.

However last time we went out for dinner the restaurant served potatoes cooked in chicken stock. These were absolutely delicious, I have had pommes boulangerie (Bakers Potatoes) before but these were not cooked in the oven but rather on the stove. Pommes Boulangerie were so named not because they contain any bakers ingredients but because people would pay a few pennies for the use of the bakers oven and would take dishes to the bakers to be cooked. In those days people would not have had their own ovens.

Bakers Potatoes
Serves 2 – 2 points each

2 medium sized potatoes peeled and thickly sliced
1 small leek thinly sliced
2 chicken stock cubes
Black pepper to taste
Water (hot from the kettle)

In a wide bottomed pan add enough water to cover the bottom and dissolve the stock cubes. Once dissolved add half the potatoes layered. Sprinkle the leeks on top and season with pepper. Add the rest of the potatoes and enough water to just cover and season with more black pepper.

Bring to the boil and then reduce the heat to a gentle simmer. Cover with a tight fitting lid and cook gently for approximately 20 minutes until the potatoes are tender and a lovely golden colour. If the sauce is too thin then remove the lid and reduce. You could also flash the potatoes under the grill for a golden and crispy topping.

I serve this with gammon or chicken and it is very filling and extremely tasty. Try adding curry powder for an extra twist.

Takeaway

There is a wonderful Italian bakery in a town near to us and as well as fresh pizza, bruschetta and ciabatta etc they also sell hot pasta ready to eat. This is absolutely delicious and very low in fat.



It costs just £1.00 per portion for medium or £2.00 for large and 2 large were enough to feed all four of us, and believe me our sons have amazing appetites. I served it with their homemade garlic bread. We estimated the points at around 10 pts each for the entire meal. Which was good considering the amount we had.

Leftovers

I cooked roast pork for Sunday lunch. A lovely lean leg joint complete with crackling. Fortunately my parents came for lunch and ate the crackling and removed any temptation. I am always at a loss what to do with leftovers. Reheating in gravy is fine but a little dull and feels like the same meal twice. So inspired by Chinese New Year I decided to try a new recipe based on a combination of Char Sui and the WW classic of Diet Coke chicken

Chinese Barbecue Pork
Serves 4 - 5 pts each

11 pts lean roast pork
1 can diet cola
8 tbsp ketchup
3 tsp chinese five spice powder
2 tsp garlic granules
2 tsp chilli flakes
1 tbsp soy sauce
1 sliced red pepper
5-6 sliced mushrooms

Heat the cola, spices, soy and ketchup in a saucepan until it thickens and then allow to cool completely. Slice the pork, mushrooms and peppers and place in an ovenproof dish. Pour over the cooled sauce and cook in a moderate oven until the sauce is reduced, thick and sticky. The pork should be thoroughly hot. I prepared the sauce the day before to ensure that it was cooled properly.

Serve with rice or a jacket potato.

A thrilling discovery

I love wraps and tortillas so I was thrilled to doscover that "Discovery Foods" soft flour tortillas are just 1 pt each. They are now on my buy weekly shoppin list!

Corontation Chicken Wraps
2 pts per wrap

200g chicken breast
2 Discovery soft tortillas
15 ml very low fat mayonnaise
1 tsp curry powder
1 tsp mango chutney
Finely chopped cucumber
Finely chopped tomato

Mix together the mayo, curry powder and chutney. Divide this between the two wraps and spread. Add the chicken cut into strips and the salad vegetables. Roll up and eat. I ate both for 4 pts and they were so filling and delicious,

Out of season indulgence

I could not resist buying some fresh rasperries as they are my favourite fruit and so low in points. I eat them just as they are and although they are not cheap especially at this time of year I felt they were worth it. The punnet was 250g and my husband and I shared them for only 0.5 pts each!

Ready Meals

I am not a huge fan of ready meals but sometimes they are a godsend. I do like a couple of the WW ones as they are low in fat and are not greasy and salty like some of the others. The only problem is that they look so awful when cooked and they are not filling enough for me. If I have one I have to serve it properly with salad or vegetables and on a plate. I cannot eat messy food! The meal pictured above is tomato and basil chicken from WW seved with a salad and balsamic and parmesan dressing - quite a plateful for 4.5 pts

Spaghetti

Is there anything more satisfying than a bowl full of the old spag bol? Always tasty and filling and when made with extra lean minced beef or even turkey mince it does not have to be too heavy on points. I bulk mine out with onions, grated carrot and mushrooms I also add lots of garlic, herbs and a dash of worcester sauce. It's so easy to make from scratch that I often wonder why people buy those jars of sauce. Homemade is much tastier and has no hidden salt, sugar or fat. Pass the parmesan!
