My name is Jo and I am a single parent. I have two young boys aged 4 and 3. I'm starting this blog in order to keep myself sane and to share my experiences as a single parent. My oldest son is called Charles but is very rarely called that, he is usually referred to as Charlie or Bobbins. He is very long sighted and needs to wear glasses all the time - when he has not broken them of course. My other son is called Leo, but is known as The Bean. He has a mild case of Spina Bifida and also has hydrocephalus, not that you would know that to look at him. My intention is to take a picture every day for a year and to write a little about it. The say that a picture is worth a thousand words and each picture will hopefully represent that day.

Weight Loss Update

Total weight loss 13lb!





Week one and I have lost 4lbs, I am very pleased :)
Week two and I have lost 9lbs how on Earth? :O

Beef Chimichangas


We love spicy food especially Mexican but it is so fattening. I made this low point version of chimichanga's today and if I say so myself they were lovely.

Beef Chimichangas
Serves 2 - 8 pts each

Filling
225g Extra lean minced beef

1 pack old el Paso fajitas seasoning mix

Sauce
1/2 can chopped tomato
1/2 pepper

1 small red onion
Handful of mushrooms
Clove of garlic

1/2 tsp dried mixed herbs
1/4 tsp dried chili flakes

4 Discovery Foods flour
tortillas
80g WeightWatchers mature cheese grated

Brown the mince in pan and add water and the seasoning mix. In
another pan add the chopped vegetables, tomato, chili and herbs. Cook until it has reduced and resembles a salsa.

Divide the beef mixture into 4 and place in each tortilla. Roll them and place in an ovenproof dish. Top with the sauce and then the cheese and cook in a hot oven or grill until the cheese has melted and is bubbling.

Serve with salad
