Beef Chimichangas
We love spicy food especially Mexican but it is so fattening. I made this low point version of chimichanga's today and if I say so myself they were lovely.
Beef Chimichangas
Serves 2 - 8 pts each
Filling
225g Extra lean minced beef
1 pack old el Paso fajitas seasoning mix
Sauce
1/2 can chopped tomato
1/2 pepper
1 small red onion
Handful of mushrooms
Clove of garlic
1/2 tsp dried mixed herbs
1/4 tsp dried chili flakes
4 Discovery Foods flour tortillas
80g WeightWatchers mature cheese grated
Brown the mince in pan and add water and the seasoning mix. In another pan add the chopped vegetables, tomato, chili and herbs. Cook until it has reduced and resembles a salsa.
Divide the beef mixture into 4 and place in each tortilla. Roll them and place in an ovenproof dish. Top with the sauce and then the cheese and cook in a hot oven or grill until the cheese has melted and is bubbling.
