About Me

My photo
My name is Jo and I am a single parent. I have two young boys aged 4 and 3. I'm starting this blog in order to keep myself sane and to share my experiences as a single parent. My oldest son is called Charles but is very rarely called that, he is usually referred to as Charlie or Bobbins. He is very long sighted and needs to wear glasses all the time - when he has not broken them of course. My other son is called Leo, but is known as The Bean. He has a mild case of Spina Bifida and also has hydrocephalus, not that you would know that to look at him. My intention is to take a picture every day for a year and to write a little about it. The say that a picture is worth a thousand words and each picture will hopefully represent that day.

French Onion Soup

Maybe not for the purists but it's good enough for me

Onion Soup
Serve 2 - 0pts each

4-5 medium onions very thinly sliced
2 beef stock cubes
Salt
1 pint water
White pepper
Worcester Sauce

Spray a pan with oil from a mister and fry the onions until very brown. This may take some time and is best if you don't stir too much to allow the onions to caramalise. Add the water and stockcubes and season to taste. I like mine to simmer for a while. This recipe uses white pepper as I think it gives a different flavour to black pepper - less aromatic and with more heat.

Serve on it's own or reduce to a thicker consistency and use as an onion gravy.

A thin slice of toasted french bread floated on top then sprinkled with LF cheese and grilled transforms this into very posh nosh for a couple of points.
