My name is Jo and I am a single parent. I have two young boys aged 4 and 3. I'm starting this blog in order to keep myself sane and to share my experiences as a single parent. My oldest son is called Charles but is very rarely called that, he is usually referred to as Charlie or Bobbins. He is very long sighted and needs to wear glasses all the time - when he has not broken them of course. My other son is called Leo, but is known as The Bean. He has a mild case of Spina Bifida and also has hydrocephalus, not that you would know that to look at him. My intention is to take a picture every day for a year and to write a little about it. The say that a picture is worth a thousand words and each picture will hopefully represent that day.

Weight Loss Update

Total weight loss 13lb!





Week one and I have lost 4lbs, I am very pleased :)
Week two and I have lost 9lbs how on Earth? :O

Lamb Kebabs


We have eaten early tonight I made lamb kebabs and they were wonderful. Much better than anything from a takeaway and no hidden points either!

Lamb Kebabs
Serves 2 - 6.5 pts each

220 g lean lamb steaks (all visible fat trimmed)
4 Pitta Breads
1/2 Courgette Grated
1/2 large carrot grated
Lemon juice
Tsp mint sauce

Cube the lamb and thread onto skewers. Cook in a griddle pan making sure each side is browned. You will not need any extra oil.
Mix the carrot, courgette, lemon juice and mint sauce together
Toast the pittas until they puff up and split.
Fill each pitta with 1/4 of the lamb and loads of the courgette mix

Absolutely fabulous!

You could also add onions, peppers, tomato, mushrooms etc to the kebabs to make this more substantial.
